Known for over 3000 years, amaranth was considered by the Aztecs as a sacred food, constituting the basis of nutrition and a source of strength.
Considered a superfood by nutritionists, amaranth is rich in protein, fiber, antioxidants, minerals and iron, being able to successfully replace rice in the diet.
It is so versatile that it can be added to preparations alongside any other cereal:
- rice makes it fluffier, together with wheat it results in a very nutritious mixture, together with barley or alac you get a rustic preparation.
Added to millet, a creamy mixture is obtained that can be used as a sauce, plain or with vegetables.
