Whole or brown rice is unhusked rice obtained after the inedible husk has been removed. Brown (whole grain) rice thus preserves the entire amount of fiber and germ, the parts richest in vital nutrients. All the rest of the grain remains intact, including its outer bran layers and the germ in the center. According to experts, brown rice contains twice as much fiber, minerals and phytonutrients.
Whole grain rice has better qualities than hulled rice: it contains vitamin B complex (especially B6), vitamin E, magnesium, copper, iron, phosphorus, potassium, selenium, zinc, it has more fiber and more unsaturated essential fatty acids. The substances that make rice nutritious are mainly stored in the upper layers.
Whole grain rice has an optimal concentration of magnesium, and the presence of potassium is extremely beneficial for reducing acidity in the blood and for maintaining bone density.
