Serrapeptase is a naturally occurring proteolytic enzyme produced by a bacterium of the genus Serratia that lives in the intestines of silkworms (Bombyx mori). The gastro-resistant coating protects the enzyme from aggressive stomach acid and thus reaches the small intestine directly, thus ensuring maximum use of the active substance. The proteolytic enzyme serrapeptase is produced by the controlled fermentation process by the bacterium Serratia E-15.

Serapeptase is enterically coated (acid-resistant, gastro-resistant), so the release of the active substance is shifted to the duodenum or other parts of the small intestine by technological procedures. The enteric coating of individual serapetase granules is provided by a polymer that is insoluble in the acidic environment of the stomach but dissolves at alkaline pH in the small intestine.
