Description Agar Agar
The information in the FAQ section was created by the Liki24.fr team and is based on the official manufacturer's manual
Agar agar is a natural gelling agent of plant origin, obtained by extraction from red seaweed, used for centuries in Asian medicine and gastronomy. It is an ecological and sustainable alternative to animal gelatin, appreciated for its culinary versatility, high fiber content, and beneficial properties for digestion.
In the context of a vegan, gluten-free, or special diet (e.g., obesity or constipation), agar agar is an essential functional ingredient.
Forms of release
Agar agar is available in various forms, the most common being powder or flakes, which are easy to measure and soluble in water.
Manufacturers - Niavis, Remedia Laboratories, Biovegan, Bio Holistic, EcoNatur, etc.
Indications for use
Agar-agar is mainly used in:
- Gastronomy: to make jellies, puddings, aspics, vegetable ice cream, panna cotta, vegan desserts, sauces, and thick soups;
- Nutrition: as a natural fiber supplement that promotes intestinal transit, combats constipation, and provides a feeling of satiety;
- Pharmaceutical and cosmetic industry: as a thickening agent and stabilizer in supplements, creams, and gels.
When used correctly, agar agar not only gives consistency to culinary preparations, but also actively contributes to maintaining digestive health, supporting optimal intestinal transit and a balanced diet. Choosing a quality source of agar agar, preferably organic and traditionally processed, is essential to benefit from all its remarkable qualities.
Dosage
The standard dosage varies depending on the form of agar and the desired consistency. For powder, the recommended dosage is:
- 1 teaspoon (approx. 2 g) to 250 ml of liquid for lightly gelled jellies;
- 5 g agar powder to 500 ml liquid for a firm gel, suitable for aspics and desserts that require cutting;
Agar should be dissolved in a liquid heated to 85–95°C, then left to set at room temperature (~30°C).
Contraindications
Agar agar is generally safe for consumption, but is not recommended for people with intestinal obstruction or serious digestive disorders without medical advice.
Agar agar may interfere with the absorption of some oral medications if consumed in large quantities due to its high fiber content.
Special considerations
Agar agar has no taste, smell, or color, making it ideal for use in dishes where flavor is important.
It is a thermoreversible product—the gel obtained can be reheated and reformed without losing its properties.
Being 100% plant-based and gluten-free, it is suitable for people on vegan, vegetarian, or gluten-free diets, as well as for children.
Side effects
Although rare, side effects may include:
- Bloating, flatulence, or abdominal discomfort, especially in people who are not used to a high fiber intake;
- Extremely rare allergic reactions
Interactions with other drugs and foods
Agar-agar may reduce the absorption of some oral medications (e.g., digoxin, anticoagulants) if taken at the same time.
It is recommended to take it at least 1-2 hours apart from other supplements or oral treatments.
Overdose
In case of excessive consumption (amounts well above the recommended daily dose), agar agar may cause gastrointestinal symptoms: cramps, diarrhea, feeling of abdominal heaviness.
Follow the recommended doses to avoid any unpleasant symptoms.
Storage conditions
To maintain its properties, agar agar should be stored in a dry, cool place, away from direct light and moisture, in a tightly closed container, ideally in a cupboard or pantry at room temperature.
Avoid contact with moist air or excessive heat, which can reduce the gelling efficiency.
